Check out this Holiday Quinoa Salad because Lisa says everyone is responsible for bringing a hot dish to the Rachel Hollis Book Club party tonight. WTF! You ain't got time for that! BUT you also don't want to piss Lisa off because you know how passive aggressive she can be.
What's a girl to do?!
Throw together this healthy pot luck dish that will have you looking like a domestic goddess, if that the look you are going for.
1 cup quinoa
2 cups chicken broth
1 1/2 cups chopped broccoli
1/4 red onion, chopped
1/4 cup candied pecans, chopped
1/4 cup dried cranberries
3 tbsp. olive oil
Juice of 2 limes
Juice of 1 Cutie Citrus Fruit
Salt and Pepper
1. Prepare quinoa according to package directions but substituting broth for water.
2. In a large bowl, add prepared quinoa, broccoli, onion, cranberries, and pecans.
3. In a small bowl, add olive oil, juice of limes, juice of orange, salt and pepper to taste.
